Oh, scones. You feel like such a treat with your flaky layers, your crunchy nooks and crannies.<br />

These scones certainly <i>are </i>a treat, but in amongst the crunchy, flaky goodness hides all sorts of healthy ingredients. Whole wheat flour, kale and coconut oil come together like old friends. Mustard seed shows up unexpectedly and makes things interesting.<br />
<br />
Coconut oil is the perfect substitute for butter. If you haven't given it a chance, well, what are you waiting for? Almond milk and vinegar do a good imitation of buttermilk and make this whole shebang 100% vegan.<br />

This is one of those health-i-fied recipes that's not just good enough, it's seriously good.<br />

2 cups whole wheat flour<br />
1 tsp baking soda<br />
1/2 tsp sea salt<br />
4 tbsp solid coconut oil<br />
1 cup finely chopped kale<br />
1 tbsp yellow mustard seeds<br />
3/4 cup unsweetened almond milk<br />
1 tbsp white vinegar<br />
<br />
Preheat oven to 375 degrees.<br />
Put your cast iron skillet on medium-low heat (or skip this step and just use a baking sheet).<br />
<br />
Combine flour, salt and baking soda in a large bowl. Add coconut oil and combined with a pastry mixer, two forks or your fingers. Mixture should be crumbly.<br />
<br />
Add vinegar to almond milk and set aside. Add kale and mustard seed to dry mix, coating kale in flour. Slowly add milk mixture until the dough comes together. It should be shaggy and a bit sticky.<br />
<br />
When your skillet is heated, drop dough in mounds into the pan, first around the edges and then one in the middle. (Or, if your skipping the skillet, drop in mounds onto a baking sheet.)<br />
<br />
Remove pan from heat and place in the oven on the middle rack. Bake for 8-10 minutes or unitl scones are golden.<br />
<br />
Makes 6-8 scones. <br />

I am currently reading the Count of Monte Cristo for the first time. I know...have I been hiding under a rock this whole time? How did I miss out on reading this classic earlier in life? I have no excuses. But, now I am thoroughly embroiled in the suspense, the agony, the love and cold-served vengeance of it all.<br />.<br />
If you think you are unfamiliar with the tale, think again. Alexandre Dumas' epic tale has been made into over 40 film adaptations and is, unavoidably, referenced in many contemporary tales of revenge (including that <i>Revenge</i> TV show).<br />

It's true. Pesto just means "paste" in Italian. All you really need is some fresh ingredients and a way to grind them up together and, bam, you have pesto.<br />

Personally, I don't go in for the whole "traditional" thing. Nor do I go in for the whole, "cheese" thing or the whole "forty-dollar-a-pound-pine-nut" thing. I make pesto my way and this week that meant making it with kale, spinach and reasonably-priced cashews.<br />

Ok, you wanna know the truth? I had a heck of a lot of kale on my hands. I was forced to harvest our entire crop after aphids thad their way with my sad little brassicas. I also had a bunch of lovely local spinach from my friends at <a href="http://www.bouncebackfarms.com/">Bounce Back Farms</a>. And as usual, I had some olive oil, garlic, lemons and cashews kickin' around. So, this pesto was inevitable.<br />

Pesto is good with everything. Pasta is just the beginning. Pesto loves sandwiches, salad, pizza and chicken. It's also amazing when paired with <a href="http://honeypievintage.blogspot.ca/2012/05/put-egg-on-it.html">this other versatile wonder </a>and scrambled.<br />

This recipe makes a generous two cups. Too much? Go ahead and half it. Or, you can do what I did: put some in a jar in the fridge (which will last about two weeks), and put the rest into ice-cube trays, pop out when frozen and save for later use. <br />
<br />
The traditional way to make pesto is with a mortar and pestle. Unless you have a giant mortar and the desire to get a great arm workout, I'd use a food processor I were you.<br />

4 cups packed fresh kale<br />

2 cups fresh spinach<br />
1 handful of fresh parsley<br />
3-5 cloves of garlic (depending on your taste)<br />
1 cup whole raw cashews (or the nut of your choice)<br />
1/2-1 tsp sea salt (to your taste)<br />
1/2 tsp fresh ground pepper<br />
Juice of 1 whole lemon<br />
1/3-1/2 cup Olive Oil (add more/less for thicker/thinner pesto)<br />
<br />
Coarsely chop kale and process in food processor until sem-fine. Add in spinach and parsley and repeat. <br />
<br />
Add garlic, cashews, salt, pepper and lemon juice. Pulse until fine and crumbly, being careful to not to let the cashews turn into a paste.<br />

With the lid on you food processor, turn on and slowly add olive oil until desired consistency is obtained.<br />

Even someone like me, who dabbles in vintage selling, often wonders: why do people opt for vintage clothes when these days it seems easy to find "vintage inspired" look-alikes everywhere, from urban outfitters to walmart.<br />

I figure fans of vintage style must ask themselves, "why would I buy this<i> 'used'</i> when I could buy it for the same price or cheaper brand new?"<br />

Well, there are all sorts of reasons to buy vintage and each retro dresser probably has their own set of top 5. Maybe it's an authenticity thing, or being into "the story" behind an item once loved by a stranger. Whatever the reasons, all you have to do is look around<a href="http://www.etsy.com/?ref=si_home"> Etsy </a>to discover there is no shortage of shoppers who believe "real" vintage is the way to go.<br />

Shopping should be fun. You know what's not fun? Trolling though rack after rack of the same shabbily-made crap, searching for anything but "this season's" colours that flood every store and offer no alternative to the mainstream. At least,<i> I</i> don't find that all too enjoyable.<br />

What I do like is going into a store and hunting down the perfect item. I like feeling that I've discovered a treasure, like I'm getting away with some devious deception by getting my hands on a good deal.<br />

Though many vintage shops are well-organized spaces, they still offer that thrill by having something unexpected on every rack. You never know what you might find at the back of the store or on page 456 of your <a href="http://www.etsy.com/category/vintage?ref=fp_ln_vintage">Etsy search</a>.<br />

Speaking of the same crap in the same colours, I've never understood why people want to dress alike. I understand trends, but why you would want to wear the exact same dress/shirt/hat/tiny mustache necklace as your best bud is beyond me. Isn't it supposed to be embarrassing to walk into a party wearing the same dress as someone else?<br />

It's true that vintage has become an unstoppable trend, but that doesn't mean you can't make your look original. Sure, when all your friends saw your super-cool leather-fringe bird-vest, they all rushed out to buy the modern copy at the mall. But, does theirs have the original, authentic native beading? Does theirs have a grateful dead patch where a hole has worn through? Does theirs smell sweetly of tobacco and suede? No, they do not. And therefore, you, and your vest are totally way cooler.<br />

Many independent vintage shops source their goods locally, so you know it hasn't traveled from China any time recently. And for that matter, it likely never traveled from China at all, since clothes used to be made on the home front a lot more often than today.<br />

Speaking of supporting small business, what's most appealing about this for me is not supporting some soul-sucking, money-grubbing, human-rights abusing, all-round-not-very-nice corporation. Guess what! There is a reason that leather bag at urban outfitters is only twenty bucks. It's because it was made by small hands for almost no pay and marked up about five hundred percent.<br />

"What is an egg collective?" you may be asking yourself. Or you may be asking, "how did I end up on this hippie-dippie, new age, tree-hugging blog, anyway?"<br />

Well, if you're still here, I'm telling you: an egg collective is a great idea, that's what it is. Basically, about 20 of us pay for a months-worth of eggs up front at the beginning of the month, then we pick up our fresh, local, organic and lovely eggs weekly from<a href="http://www.bouncebackfarms.com/"> this little urban farm</a> run by my good friends Shannon, Amy and Andy. They don't supply the eggs, but they organize the whole thing, provide a spot for them to live while they await pick up and are usually getting up to some hi-jinks when you come around for your weekly carton.<br />
<br />
So anyway, since joining in with this collective, we occasionally find ourselves overly rich in ova. When this happens, my mantra has become: <i>put an egg on it. </i>Eggs can add a punch of protein to veggie-heavy meal. They can make a snack into something much more satisfying. Breakfast lunch or dinner...just put an egg on it.<br />

I am about half-way through reading A Space Odyssey: 2001 by Arthur C. Clarke. I have always been a fan of Kubrick's film version and after I bought what I thought was the <i>original </i>story in book form, I learned that Clarke's book and Kubrick's screenplay were written simultaneously. Very interesting.<br />
<br />
But, this post is about an interesting passage I came across while reading. Turns out, Arthur C. Clarke invented the ipad. At least, the idea of the ipad. In the images above, you can see, in both the cover art of the book and a scene from the movie, characters using almost ipad-identical devices.<br />

Here in Victoria, spring comes early. Things begin to blossom in February and don't seem to stop until, well...ever. Living in a coastal rainforest means that the environment stays green for most of the year. My favourite part is the moss. I have an obsession with how fuzzy and squishy and lush it is. I wish my bed were made of moss.<br />
<br />
Of course, you can't argue with the all the pretty blossoms popping up either. Our whole yard is covered in flat-leaf parsley left over from the gardening efforts of previous tenants. And I can't even explain to you how excited I am for the blossoming of the giant lilac that hides our front porch.<br />
<br />
I've got six egg carton trays of seedlings on the living room windowsill and they all seem to be coming along nicely. Mustard greens, basil, kale, tomatoes and peppers. Our little garden in the making!<br />

I used to have a bit of a fear of bread-making, which I am led to understand is quite common. I think it's that whole (it's alive!) yeast thing and the whole (must have hulk arms) kneading thing. But, then I got a stand mixer and it was like the doors to bread heaven opened to the song of celestial beings.<br />

You don't <i>need </i>a stand mixer to make bread and you certainly don't need a bread-maker. Don't you just hate it when you find a recipe that looks good until you get to the part where you need a bread/ice cream/doeverythingforyou maker. I <i>am </i>a bread-maker..that is why I need recipe. c'mon.<br />

Ok, so this recipe is almost too easy to post. I feel like I am patronizing you somehow by toting this as some revelation in the vegan cheese world. But, in all my dairy-alternative searching, I have never come across this particularly awesome version of parmesan. I like to think I invented it, but chances are it's just so simple that people are just walking around thinking "like...duh. Of course that's how you make vegan parmesan."<br />

*Paprika comes in "hot" or "sweet". If you want a little more spice, go for the hot. That's what I like to use.<br />
**I used canellini beans for this. But you could just as well use white kidney beans or even chick peas.<br />
***You could use any cooking greens here. The greens you see pictured are actually beet greens which were nice...kale would work too!<br />

Slice chorizo into thin rounds and add to pot.<br />
Saute sausage until starting to brown, about 5-7 minutes.<br />
Add herbs and spices and saute about 1 minute.<br />
Add chicken stock, tomatoes and beans.<br />
Let simmer for 10-15 minutes.<br />
Before serving, add chopped spinach. Mix until greens are wilted.<br />

</tbody></table>It may seem strange, especially to those who are up to their eyeballs in a frozen fortress of the stuff, but I really want it to snow here in Victoria. And really, even<i> I</i> am starting to doubt my own sanity because, it is <i>beautiful</i> here right now. The sun is shining, there is barely a cloud in the sky and it is just cool enough to wear a cozy sweater - more like fall than winter. But, the Decembers of my childhood were in a snowier climate and that's still what I expect around this time of year. I'm one of those people that still gets all fuzzy and weird about Christmas and it's just not the same without the snow. <br />

I keep hoping that it'll be like in the movies, when that California family wakes up on Christmas morning to see the Christmas! Miracle! of Snow! Of course, if that does happen, the entire city will shut down because in places like Victoria they just don't know how to handle a little white fluff. People literally start driving off the roads. And I just revel the hell out of it.<br />

Snow just makes everything look pure and pretty. It makes the city quiet and the indoors seem even cozier. I'll admit, come February, snow is gross. It's grey and slushy and we are all sick of it by then. I've been making practically the same Saturday breakfast for months now - poached eggs, pan-fried hashbrowns, store-bought toast and bacon - so last weekend I was ready to mix it up a bit.</span><br />

<span class="Apple-style-span" style="font-family: Arial, Helvetica, sans-serif;">This time, I tried my hand at zucchini-potato pancakes, rosemary-sage biscuits and a new twist on the sunny-side up egg. I did stick with the bacon because, um...it's bacon. I have to say that it was 80% successful, which isn't too bad for the weekend, am I right?</span><br />

<span class="Apple-style-span" style="font-family: Arial, Helvetica, sans-serif;">Right off I'll admit the pancakes were a fail. I have a serious lack of skill when it comes to making things crispy in a frying pan. Combined with my lack of time spent squeezing the cheesecloth and my laissez-faire attitude about using the right potatoes, that recipe was doomed from the start.</span><br />

<span class="Apple-style-span" style="font-family: Arial, Helvetica, sans-serif;">But, I like to think the eggs and biscuits more than made up for my less than perfect pancakes. Oh, the biscuits! Crispy all over with slightly flaky and flavourful insides. I could have just eaten three of these for breakfast, but that wouldn't make a very balanced meal now would it?</span><br />

At any rate, they were an easy and delicious success.</span><br />

If you want to get fancy you could add in some feta cheese, chopped fresh spinach, cheddar, olives...anything really! </span><br />

Add in cubed butter and combine with a pastry mixer, two forks or your hands. Mixture should be coarse and crumbly. Mix in milk and vinegar until just combined to get a sticky dough.</span><br />

Cover with a lid, remove from heat and let sit 2-3 minutes for soft yolks, 4-5 for harder yolks. Then, voila! You're ready for breakfast. So much easier than baking them in the oven, eh? </span><br />

For one thing, the consumerist drive to spend, spend, spend on cheaply-made trinkets that none of us really need. But, every year, I can't help but get all tingly when December approaches and twinkling lights start appearing all over the city. Now, that I live in the temperate climate of the West Coast, I find myself craving a snowfall like we had in the good old days back east.<br />

</div><div>And, although I hate the idea of me or anyone I love trolling a busy, over-heated holiday mall looking for gifts, I still have a wish list. Doesn't everyone? Some things you just can't get at a thrift store, and since I find it difficult to shop anywhere else, those are the things that mostly make up my wish list.</div><div><br />

</div><div>I haven't had many opportunities to cook a whole Thanksgiving dinner. I've attended many gatherings of family and friends where I gladly contribute my one holiday dish, but I had never hunkered down and done a full-on Thanksgiving cook-a-thon. Until this year that is.</div><div><br />
</div><div>We hadn't even invited anyone and I was already convinced I was going to do this thing. I didn't care if we had to live off turkey and apple pie for weeks afterwards (would that have been so bad?), I was going to make traditional Thanksgiving dinner with all the trimmings.</div><div><br />

</div><div>Like I said, I went fairly traditional, so you wont find any truffle infused whipped potatoes with cranberry paté in this post. But, I did attempt to throw in the occasional creative twist.</div><div><br />
</div><div>The great thing about our North American traditions is that they have so much food overlap. In reality, this is probably what leads to wide-spread and unnecessarily negative feeling towards turkey. If this seems like too much effort, I recomend going with the bag of stale bread bits, which is much easier, but doesn't sound nearly as nice.</div><div><br />
</div><div>While your bread is drying, cook your bacon on medium heat until crisp. Remove bacon from pan, but conserve the fat (fat is flavour, ya know!) Coarsely chop bacon and set aside.</div><div><br />
</div><div>Next, core apples and chop into small chunks. No need to peel if you don't want to. Do the same with onion (peel that one though). Dice the celery and herbs, removing the leafs from the stalks before doing so.</div><div><br />
</div><div>Combine all ingredients, including bacon grease in a bowl and mix well. Then grab that turkey and let'em have it. Make sure the turkey's cavity is empty, then stuff that stuffing like you've never stuffed before.</div><div><br />

</tbody></table>I watched a lot of TV as a kid. When I think back on how many hours of my young life were spent in front of the squawk box, I am baffled. Now, like so many others, I don't even own a TV. Perhaps it is due to the unbearable nature of commercials, but maybe it is because there just isn't the same kind of programming like we had back in "the good 'ol days". If <i>Cheers</i> was still on today, I may just buy myself a bigscreen.<br />
<br />
I have to say, I seriously, unabashedly LOVE <i>Cheers. </i>Perhaps I seem a bit overemotional about a TV show, but I think I have a good deal of sentimental attachment to the thing, considering it practically raised me. My brother and I would watch C<i>heers </i>so often that we invented a game called "Cheers Trivia" in which we would quiz each other on obscure facts from the show. Yea, we watched it a lot.<br />
<br />
But, I'm not here to tout the never-ending list of reasons why one should deem <i>Cheers </i>one of the best shows of the 1980s. I am here to talk about the fashionable side of the little bar in Boston.<br />
<br />
The style of the <i>Cheers</i> cast was relatively simple. After all, Sam, Diane, Carla and Woody were just regular people, working in a regular bar, living out the hilarity of everyday life. I wouldn't call any of these characters a "style icon", but they all had their charm nonetheless.<br />

</tbody></table>Let's start with Sam. The ladies man. The secretly sensitive tough guy. The heart of <i>Cheers, </i> if you will. Sam Malone (Ted Danson) is supposed to be cool and suave, therefore he must be stylish. He has a certain sportiness to his style (being a retired pitcher), but often goes beyond the baseball jackets and plaid shirts into the realm of the 80s sweater.<br />

</tbody></table>Then there's Diane (Shelley Long), the first of the female "love interest" characters. Her style is mostly prim and stuffy with a lot of carry-over from the 70s. High collars and pastels often rule Diane's wardrobe.<br />
<br />
Rebecca Howe (Kirstie Alley) on the other hand, comes later in the series and as a driven career woman is clearly more of a fashion-forward female. She is all about the broad-shouldered blazers with a big brunette mane to top it off.<br />
<br />
My favourite, though, has to be Carla (Rea Pearlman). She is spunky and sporty and just plain great. Carla's style is casual. She works too hard to get all fancy. But, her tapered jeans, plaid shirts and mass of curls would probably be coveted by some of the most fashionable young-uns today.<br />

I admit that I never really thought about the stylish side of <i>Cheers </i>while watching it. I was too distracted by the impeccable acting, the endearing characters and the sometimes heart-warming, always entertaining story lines that still keep me laughing all these 20 years later.<br />

</div><div>*A note on SALT: I used <a href="http://www.maldonsalt.co.uk/">Maldon</a> salt on my chips as it has light flaky crystals and a nice taste. You don't have to use fancy salt like this, but if you have it (or fleur de sel) why not put it to good use?<br />
And if you're feeling brave, why not experiment and throw some other spices in there? I recommend fresh ground pepper, garlic powder and cayenne.</div><div><br />
</div><div><b>Preparation:</b></div><div>Preheat oven to 300 degrees (Fahrenheit).<br />
Remove kale leaves from thick center stalks. You want to keep the leaves in large pieces, so a knife works better than hands for this job.<br />

This is usually my method for cooking and sometimes, I have better luck than others. I like this recipe because it is simple and made with stuff I usually have hanging around the fridge and pantry.<br />

Ryan likes things to be spicy and strong-flavoured, so I ventured this sauce and it was a hit. You'll see the vegetables I used listed below, but I would say you could use just about anything in here. A warning for future recipe posts: I use bell peppers in EVERYTHING. They are delicious and good for you. I don't think I need to explain myself. But, you could also use mushrooms, spinach, bok choy, carrots, celery...whatever strikes your mood.<br />

A word of caution: for those who are sensitive to spice, tread lightly friends! Sambal is delicious but can be deadly if you go crazy with it. Add a little and taste as you go to see if it is to your taste.<br />

Stir-Fry-ables<br />
1/2 a medium sized onion - diced<br />

First, dice your onion and garlic and set to simmering on medium to low heat. Now would be a good time to prep the vegetables you'll be using as well. I recommend cutting them into medium-sized pieces. Set veggies aside.<br />

Or, if using tofu, into bite-sized cubes. Add to pan when onion and garlic are translucent. Brown chicken/tofu - this should take about 5 minutes - do not overcook!<br />

Add sauce ingredients. Allow to simmer about 8 minutes, until chicken/tofu is cooked through and sauce has thickened. Add vegetables.<br />
<br />
Cook about 5 minutes or until veggies are just tender. Toss with sesame oil and seeds. Serve over rice and garnish with parsley (or cilantro if you are into that sort of thing).<br />

Don't get me wrong. I enjoy summer as much as the next girl. But even more than sun-bathing and cocktail-sipping, I love the cool mornings, crackling leaves and harvested abundance of autumn. <br />

Besides, fall is sweater weather! Who doesn't relish an excuse to bundle up in a much-loved sweater? This time of year (in Canada anyway) is the perfect balance of cool enough for a sweater, but not cold enough for a coat. And I love it. <br />
